Wash and peel the apples and remove the core. Cut them into wedges, put them in a suitable bowl and pour lemon juice over them.

In a saucepan, bring the water to the boil together with the white wine, sugar, raisins, cloves and cinnamon bark and leave to infuse briefly. The spices make the applesauce wonderfully fragrant.

Now mix in the apples, cook until soft and strain. Refine the strained applesauce with a little apple brandy and vanilla sugar, if desired.
