For the beer casserole, cut the beef into cubes, heat the butter and quickly fry the meat in it and transfer to an ovenproof dish. Finely chop the onions, bacon cut into strips, fry in the drippings add everything to the meat and sprinkle with flour.

Stir in bay leaf, garlic, mushrooms, salt and pepper and pour light beer over it. Simmer covered in the oven at 170°C for about 2 hours. Season to taste with a dash of wine vinegar. Add a little beer to the casserole if necessary.
