Cooking asparagus the right way: You can use this basic asparagus recipe as the basis for many asparagus dishes. It shows you: the correct way to prepare asparagus, how long to cook asparagus and how to peel asparagus.
Peel the asparagus (the white one directly from the head to the end, for the green one start a hand width behind the head), remove woody ends.
In a large pot, bring enough (min. 1 l) water to a boil. In this water you can also boil the asparagus peels and ends, this improves the aroma. Once the water boils. Add salt and sugar.
Now put in the asparagus and let the water boil again. Then reduce the heat sharply so that the asparagus only pulls gently. The total cooking time depends on the thickness of the asparagus. For “normal” thickness asparagus stands, it should be about 12-15 minutes.
However, since tastes differ, carefully pierce an asparagus spear with a fork and check whether the asparagus is still too firm or already tender enough.
Before serving, briefly pat the asparagus dry – so the sauce holds better on the stalks.
