Instructions:

Remove the leaves from the cauliflower and remove the stem so that the small head does not fall apart. Steam the cauliflower al dente in a little salted water with the lid closed. Add the slices of ham to the cauliflower and heat briefly. Heat the butter in a saucepan, add the flour, stir well and pour in the cold milk at the beginning and add the clear soup while stirring continuously. Boil everything well to obtain a creamy sauce. Season with iodized salt and white pepper, add fresh herbs and remove from heat. Mix the egg yolks with the whipped cream and stir into the sauce with a whisk. Form the heated ham in the center of the plate, place the steamed cauliflower on top and top with another slice of ham. Cover with the sauce and sprinkle with the grated Emmentaler. Bake everything together in the oven at 180 °C until the cheese has melted. Finally, sprinkle with a little bit of herbs. Peel the cooked new potatoes, sauté in a little butter and sprinkle with parsley. Arrange around the dish.
