Remove peel from apples, cut into quarters. Cut out core. Cut into cubes. Make apple puree with cinnamon, juice of one lemon and water. Sieve. Mix flour in 30 g. Sweat flour in 30 g. of melted butter, add white wine. Stir in apple puree. Bring to a boil. Heat remaining butter. Fry the bread cubes in it. Serve the soup with the cubes.
