Carefully cut the chestnuts and boil them in water for 20 minutes. Remove the chestnuts from the water and peel them, making sure that the brown skin is also completely removed.

Heat the water and sugar until the sugar is completely dissolved, then add the vanilla essence and add the chestnuts.

After ten minutes, remove the chestnuts, let them drain on a sieve or wire rack and dry for 24 hours.

Bring the syrup to the boil again and boil the chestnuts until they are covered with a thick layer of syrup. Then drain again and let them dry until they are completely dry.
