For the sweet potato fries, wash the sweet potato very well – they do not need to be peeled. Cut into strips of about 8×8 mm (French fries cutter).
In a deep pan or deep fryer, heat oil to 170 °C (if you hold a fry in it, it will start to bubble right away. Pre-fry about half of the fries for about 5 minutes, making sure the fat stays in the 150-170° temperature range.
Remove again and drain. Do the same with the remaining fries. If necessary, set the fries aside for later finishing or process them right away.
Heat the fat to 170-190 °C. Fry the fries until crispy. Drain, salt and serve immediately.
