Clean and rinse vegetables. Cut spring onions into bite-sized pieces, mushrooms into slices. Clean and rinse the chicory and remove the wedge-shaped stem. Cut chicory (except for two leaves for garnish) into rings. Rinse, quarter and core apples. Cut apple quarters into wedges. Drizzle mushrooms, apples and chicory with juice of one lemon.
For the dressing, mix orange juice with salt, pepper and sugar. Add oil to it. Mix prepared ingredients and pumpkin seeds with the dressing. Cover and let stand for about 30 minutes. Season again.
Serve garnished with the chicory leaves. Serve with fresh baguette.
