Perhaps your new favorite bean dish:

Gut the fresh squid. If present, carefully remove the ink sac without damaging it. Next, remove the skin, rinse the squid with care and cut it into small pieces. Frozen squid can be used as well.

Season the beer with the thyme, the bay leaves, pepper and salt, and make the squid in it for 30 to 40 minutes, until it is cooked. Cut the bell pepper into cubes, chop the dill and add it to the squid together with the onion. Simmer everything together for another 10 min. on low heat. Stir the lime juice with the paradeis pulp and add to the squid. Stir so that the paradeis pulp is distributed.

Serve with a variety of vegetables, such as red bean casserole.

(*) In Barbados there are squids of different sizes, commonly called octopus there. Squid is the name of a small species of octopus. In the vernacular they are also called Sea Cats.
