Semolina Flummery with Honey Dates

Instructions:

Separate the eggs and whisk the egg whites until stiff. Grate the zest of the washed lemon and orange into the milk, stir the egg yolks with the juice of the orange. Add the sugar and the pulp of the vanilla pod to the milk and bring to the boil. Add the semolina and bring to a boil, stirring continuously, and let it soak for a few minutes. Remove the mixture from the heat. Fold in the egg yolks with the orange juice. Gently fold in the snow and transfer the semolina flummery to a large enough bowl and set aside to cool.

For the sauce, remove the stones from the dates. Peel the apple and cut it into small pieces. Melt the butter in a frying pan and brown the apple pieces in it, sprinkle with cinnamon. Add the sugar and stir well until caramelized, then add the dates.

Deglaze with a little apple juice, stirring constantly. As the last step, add the whipped cream and cook a little. Divide the semolina evenly into bowls and serve with the sauce.
