For the sea bass wrapped in bacon with fresh summer herbs, preheat the oven to 160 degrees (convection oven). Rinse the fish in cold water, pat dry and rub with salt and pepper.
Then slice the lemons, rinse the herbs and shake dry. Spread about half of the lemon slices, the herbs and the bay leaves in the fish.
Now place the fish in a large baking dish and top with the bacon, as well as the remaining lemons.
Pour wine and drizzle the fish with olive oil. Cook the sea bass for about 35 minutes.
Serve the bacon-wrapped sea bass garnished with fresh summer herbs.
