For the wild garlic parsley pesto, first wash the wild garlic and parsley. Use either a stand mixer or smoothie maker to make the pesto.
Cut the wild garlic and parsley leaves into coarse strips. Add about a quarter of the wild garlic leaves to the blender container. Add salt, nutmeg, some of the olive oil and parmesan and blend.
Then keep adding wild garlic leaves, parsley leaves, parmesan and olive oil and keep blending. When all the wild garlic and parsley have been pureed, add the peeled almonds and mix one last time.
Then season to taste, pour into sterile jars and store in the refrigerator.
