For the vegetable casserole with tagliatelle, steam the tagliatelle in salted water with a little olive oil until al dente, strain, cool, drain and set aside.

Heat the butter in a saucepan and fry the peeled and finely chopped onions until translucent. Add the mixed vegetables and sweat them briefly. Mix the sorted, washed and finely chopped herbs with the ribbon noodles, season strongly with nutmeg, salt, pepper and cayenne pepper.

Pour in the clear vegetable soup, bring everything to the boil and simmer for 8-10 minutes. Season the vegetable stew with ribbon noodles to taste and serve each portion with a blob of sour cream!
