Carefully clean the vegetables and the leeks, cut away the roots and cut into narrow strips. Peel the potatoes and cut into small cubes.

Chop the thyme, parsley, rosemary and basil. Bring the tomato sauce to a boil. Mix the cornstarch in cold water.

Mix flour and eggs and stir until smooth. Add milk and whipped cream and pour over the top. Let the dough rest for an hour.

Brush a coated pan with melted butter. Add a ladle and bake golden brown pancakes.

For the filling, steam vegetable strips and potatoes. Add finely chopped parsley and season.

Fill the pancakes, fold them and arrange them on the paradeis sauce.

Add finely chopped thyme, rosemary and basil to the paradeis sauce and season to taste.
