Pat the meat tenderly flat without tearing it. Sprinkle the spices (not too sparingly!) and the finely diced bacon on top, roll up, cover with a roll roasting net and grill on a skewer on the heated broiler for about an hour and a half.
Collect the gravy. Brush with butter and gravy in between.
This recipe comes from the humanist, theologian and papal librarian Bartolomeo Sacchi (1421-1481), known as Platina. It is in his kitchen bestseller ‘De honesta voluptate et valetudine’ from 1475, in German translation ‘Von der Eerlichen, zimlichen, genauso erlaubten Wollust des Leibs’.
Our tip: Use a bacon with a strong flavor – so you give this dish a special touch!
