For the plaice in batter, brush the plaice fillets with pesto and let rest briefly. Separate the eggs and beat the egg whites. Mix the beer with the flour until smooth and add the yolks. Add the beaten egg whites, salt and oil. Dip the coated fish fillets with flour in batter and bake in hot oil until golden.

Serve the plaice in batter with potato salad!
