Pasta dishes are always a good idea!
Rinse and clean the peppers. Roughly dice the onions and finely chop the garlic. Cut the peppers into tender strips.
Heat the oil in a frying pan and steam the onion, garlic and peppers in it for 5 min al dente with the lid closed.
At the same time, make the pasta al dente according to package directions and drain in a colander.
Mix the pasta, the spices and just under 1 tsp salt with the vegetables. Pour the beaten eggs over the top. Distribute the coarsely diced tomatoes evenly on top, season lightly with salt and season with pepper. Cook the eggs at a low temperature until stiff. Serve the omelette sprinkled with cheese.
