For the leek cake, first prepare the dough. To do this, dissolve the yeast in lukewarm water. Sift the flour onto a work surface and make a well. Add the yeast, egg, oil and a little salt and knead into an elastic dough. Form into a ball and let rise covered with a cloth for about 1 hour in a warm place. Meanwhile, cut the light part of the cleaned leeks into thin rings and steam them in hot olive oil for about 10 minutes, covered until soft. Let the leeks cool down. Whisk eggs with salt, bell pepper and paprika powder and mix into leeks. Roll out the dough not too thinly on a floured work surface and line a buttered cake pan with it. Cover the bottom of the pastry with the bacon slices. Spread the leek and egg mixture on top and bake in a preheated oven at 180 °C for about 30 minutes. Remove, portion and serve hot.
