Instructions:

Preparation of dough: For the panda cake pops, preheat oven to 160 °C.

Cream butter and sugar in food processor on medium speed until fluffy. With the motor running, gradually fold in the eggs. Sift together the flour, baking powder and cocoa powder, mix well and blend until smooth.

Pour the batter into the prepared cake pan and bake in the oven for 25 minutes, until risen and baked through on the inside. Pierce with a wooden skewer to test. No batter should stick to it.

Let the cake cool in the pan for 30-40 minutes, turn out onto a cooling rack and let cool completely.

Shape sponge balls/cake balls.

Grind the cake into fine crumbs in a food processor and set aside. Blend cream cheese and powdered sugar until smooth.

Mix cream cheese mixture into dough crumbs with your hands to make a moist dough mixture.

Weigh out 30 g of dough mixture on a digital kitchen scale, roll into a ball and place on a plate. Form another 19 balls from the remaining dough.

Place the balls in the refrigerator for a couple of hours (if you are short on time, place them in the freezer for at least 10-15 minutes) until they are set through – but neither rock hard nor frozen.
