For the low carb cake, first cut a thin slice off the top and bottom of the watermelon so that it stands securely. Then cut off the rind and some of the flesh all around, creating a nice round cake shape. Do the same with the cantaloupe melon.
Peel the pineapple and kiwi and cut crosswise into thin slices. Cut out flowers or hearts from the pulp.
Place the watermelon as the first “layer” on a cake plate, place the cantaloupe melon on top. Attach kiwi and pineapple pieces to and on top of the cake with toothpicks.
Carefully wash the blueberries, pat dry and place as a necklace on the first tier of the cake. Place a few berries on top of the low carb cake.
