For the cottage omelet, first mix all the ingredients, except the cheese.
Heat a little oil in a pan (20 cm Ø) and pour in the batter. Cover and bake over moderate heat until the bottom side is nicely browned. The top side should be firm before turning over.
After turning, cut in half, cover one side with cheese and let cheese melt. Let bottom side brown again. Then fold both halves of the cottage omelet together.
