For the ham fritter casserole, cook fritters in boiling, salted water with a teaspoon of butter until tender. Strain, rinse and set aside.
Separate eggs. Beat 60 g of the butter until creamy. Stir in yolks, salt, pepper and sour cream. Preheat oven to 180°C.
Chop ham and parsley. Beat egg whites until stiff. Mix Fleckerl, ham and parsley into the yolk mixture and fold in beaten egg whites.
Grease the baking dish and dust with flour. Pour the mixture into the dish and smooth it down. Grate cheese on top and bake for 30 minutes with butter flakes from the rest of the butter.
Serve the ham fritter casserole.
