Warm the milk to lukewarm. Sift the flour into a suitable bowl, make an indentation in the center, crumble the yeast into it and stir with a teaspoon of sugar, a little milk and flour to form a damp. Cover and let rise in a warm place for about 15 minutes. Melt the butter in the remaining milk, add the sugar, salt and egg yolks and mix with the dampfl to form a smooth dough. Let it rise again with the lid closed in a warm place for about half an hour. Cut out a Stutenkerl figure from the parchment paper.

Roll out dough, place template on top, wheel out gingerbread man and place on a baking sheet lined with parchment paper. Brush with egg yolk.

Cut out decorations of choice from dough scraps and glue in place. Press in raisins for eyes and buttons, and place a clay pipe in each arm to taste. Let the gingerbread men rise again with the lid closed for approx. 15 min. and bake in the heated oven at 180 °C (gas mark 2) for approx. 15-20 min.
