A great fish recipe to make yourself:

Fillet the dorades and skin them. Season the fish fillets with pepper and salt. Mix lemon zest, thyme, cheese and bread to make breadcrumbs.

Start by turning fish fillets in flour to the other side, then pull through egg, then turn in breadcrumbs to the other side. Fry in olive oil on both sides over medium heat until golden brown.
