For the fruit salad, rinse the fruit and remove the peel or clean. Then cut into small pieces accordingly.
Melt the butter in a saucepan, deglaze with the pineapple juice and bring to the boil. Now remove from heat and add lemon juice, yolks, sugar, rum and vanilla sugar. After the whole thing has cooled down, pour it over the prepared fruit. Finally, whip the cream until stiff and stir into the fruit salad.
