Specialties from Saxony-Anhalt Vendace is a whitefish species, related to the Bavarian whitefish. Vendace can be found in the Arendsee in Saxony-Anhalt.

Marinate the fish briefly in the juice of a lemon and season with white pepper and salt. Turn in flour and breadcrumbs on the other side. Melt 50 g butter in a frying pan over medium heat and carefully roast the fish on both sides for about 7 min. in total. After 5 min of roasting, extinguish with a splash of white wine.

Remove the fish from the roasting pan and keep warm. Use the white wine to dissolve the roasting juices, pour off through a hair sieve, add sour cream or crème fraiche and cook until reduced by half.

In a second pan melt100 g of butter, pour in the almond flakes, color, remove from the stove and keep warm. Garnish the fish with the sauce and the almond flakes.
