Forest honey, orange juice, egg yolks, cinnamon and salt stir together until the amount is lighter. Whip half cream or cream until stiff, add, whip egg whites until stiff, add sugar to the snow form, continue beating briefly, then mix with rubber scraper exactly, but extensively, into the amount, fill on the spot into suitable containers and freeze.
Serve: with orange or possibly plum sauce.
Note: Do not freeze leftover thawed parfait repeatedly.
