For the curd pancakes, make a pancake batter from flour, milk and eggs with a pinch of salt. Bake about six to eight pancakes one after the other in a little oil.

Mix curd cheese with jam and lemon juice and vanilla sugar, spread pancakes with two or three tablespoons of this mixture, roll them up and serve with the compote.
