A great cake recipe for any occasion:
1) Flour, sugar. Salt, eggs and fat in flakes knead together into a smooth dough. Cover and refrigerate for half an hour.
2) Rinse and dry raisins. Mix with rum. Peel apples in half and remove seeds. Sprinkle with juice of one lemon.
3) Roll out half of dough in a greased, lightly floured grease pan (about 35 X 40 cm). Press up edge a little bit. Fill apples with raisins, press smooth. Place close together on the dough with the bulge facing up.
4) For the pudding (prepare differently than indicated on the package) mix pudding powder and 150 g whipped cream until smooth. Bring 600 g whipped cream, sugar and vanilla sugar to a boil. Mix in pudding powder, bring to a boil briefly and pour over apples.
5) Roll out the remaining dough into a rectangle (approx. 32 X 40 cm). Place on top of the apples. Press the edges of the dough smooth. Bake the cake in the heated oven (electric oven 200 °C convection oven 175 °C / gas: level 3) for 1 to 1 and a quarter hours.
6) Mix egg yolks. Brush the cake with the egg yolk about 15 minutes before the end of the baking time and bake until done. Cool and cut into pieces. Decorate with cream puffs if desired.
