A stunningly tasty cake, divide into lozenges or possibly slices for serving.

Heap the flour in the wide bowl of the food processor. Press a well in the center. Pour the yeast dissolved with a soup spoon of sugar and milk and mix with a little flour from the edge.

Put this dampfl under a dishcloth in a warm place and let it rise for about ten minutes. Now add the remaining sugar and the egg.

Turn on the machine and knead it into a firm dough, incorporating the soft butter only at the very end. The dough should then come away cleanly from the edge of the bowl. Transfer it to an earthenware bowl and let it rise again with the lid closed, for about one to 120 minutes. Finally, roll the dough vigorously one last time.

Roll out about half of the dough as thinly as possible and line a baking tray with parchment paper or foil.

In the meantime, remove the skin from the apples, cut them into quarters and remove the core. Turn the pieces in juice of one lemon to the other side so that they do not turn dark. Slice the quarters and spread them evenly on the dough base. Sprinkle with grated lemon zest, cinnamon, half of the sugar and half of the almond flakes.

Roll out the remaining dough just as thinly and spread it over the top. Press both pieces of dough firmly together at the edge.
