For the raisin cake, first soak the raisins in rum and let them soak for a while.

Sift the flour into a bowl. Crumble in yeast and prepare a dampfl with a little sugar, flour and milk. Cover and let it rise for 15 minutes.

Knead the remaining sugar, butter, eggs, salt and lemon zest with the dampfl and all the flour into a dough. Beat the dough until it bubbles. Let rise again for 30-40 minutes.

Now butter the mold.

Knead the raisins into the dough and pour the dough into the mold. Let it rise for another 15 minutes.

Preheat the oven to 200 °C. Bake the cake on the lowest rack for 50-60 minutes, remove the raisin cake from the oven and brush with butter while still hot.
