For the coconut biscuits, beat egg whites until stiff. Mix sugar and starch and slowly add to the beaten egg whites. Beat until the mixture has a nice sheen.
Mix the orange zest with the coconut flakes and quickly stir into the sugar and snow mixture. Spread the wafers on a baking tray and place a small heap of the mixture on each wafer with a teaspoon. Bake at 175 °C top-bottom heat for about 12-15 minutes.
As soon as the tops turn brown, remove the coconut buns.
