For the chicken soup, wash, clean and peel the greens and put them in a large pot with the water. Wash the chicken soup giblets and add them to the water as well.
Bring everything to a boil and then simmer on low heat for 2 hours. After 2 hours, strain the soup through a fine mesh strainer.
Discard the chicken meat and chop the greens and add them to the soup. Add the letters and the seasoning and cook for another 8 minutes.
