Instructions:

For the marinade, place the crushed garlic, chopped shallot, sesame oil, fish or soy sauce, lime or lemon zest and juice, grated ginger and finely chopped mint in a large non-metallic baking dish. Season with a tiny bit of salt and pepper and stir well until all ingredients are thoroughly mixed together.

Remove the skin from the chicken breast. Cut the meat into small pieces.

Add the chicken to the marinade and stir well to completely coat the meat. Cover with plastic wrap and chill in the refrigerator for at least 2 hours to allow the flavors to absorb.

Thread the meat onto wooden satay skewers. Place on the broiler rack of a grill pan and drizzle with the marinade.

Grill the meat skewers under a heated broiler for about 8-10 minutes. Turn often to the other side, drizzling with the remaining marinade.

Garnish the meat skewers with fresh mint sprigs and bring to the table on the spot.
