For the Asian noodle salad, cut the melanzani into very thin slices, place on a baking tray and salt.

Mix 2 tbsp. peanut oil with paradeis pulp in a pan and deglaze with vinegar. Finely chop garlic and chili, add, sweat and season with salt and pepper. Pour in vegetable soup and add curry powder. Remove from heat and mix with 2 tbsp peanut oil.

Meanwhile, cook the noodles, strain, cool and mix in a bowl with the sauce.

Peel and finely slice the cucumber. Peel and chop the papaya in the same way.

Grate the ginger and mix it into the cornstarch. Bread the melanzani with it and bake in hot fat until crispy.

In a bowl, mix vegetables, noodles, remaining peanut oil and salad dressing.

Briefly fry shrimp in a pan with a little oil. Season with salt and pepper.

Drape shrimp and melanzani chips on top, pluck Thai basil over the top and serve the Asian noodle salad.
