For the avocado sorbet with marinated strawberries, halve the avocados, pit them and scrape out the flesh with a spoon. Finely puree with 2 tablespoons lime juice and the sugar syrup.

Beat egg whites until stiff and mix into the cream together with the lime zest, and season with lime juice.

Pour sorbet mixture into a shallow bowl and freeze for 4 hours, stirring once every half hour.Wash, clean and slice strawberries.Mix with sugar and orange juice and marinate for at least 30 minutes.

For the avocado sorbet with marinated strawberries, spread the strawberry ragout on plates and arrange two scoops of sorbet on each.
