To make the avocado cashew dip, first chop the cashews with a food processor. Halve the avocados, pit them and remove from the skin. Mash the flesh with a fork and blend until creamy. Press the garlic and add to the avocado mixture along with the lemon juice and zest. Stir in the cashews.
Season the avocado-cashew dip with sea salt and pepper.
