(*) For 4 ramekins of 2 dl capacity, pit apricots and cut into pieces. With sugar and vanilla sugar, lightly roll at low temperature with the lid closed. Cool slightly, then crush.

Bring cream, milk and vanilla stalks to a boil, remove vanilla stalks. Mix in apricot puree. Add well-squeezed gelatin and stir until dissolved. Fill apricot mixture into ramekins, place in refrigerator to set for three to four hours.

Mix berries with sugar, marinate for five minutes. Dip the ramekins briefly in hot water, turn the apricot panna cotta out onto plates. Arrange the berries on top. Garnish with lemon balm.
