For the apple cold peel, wash the apples, peel them and remove the core.
Squeeze the lemon.
Stew the apples with the water or wine until soft and strain through a sieve. Season with the lemon juice and sugar and let cool.
Stir the rosehip juice and half the amount of vanilla ice cream into the apple mixture. This is best done with a food processor.
Pour into cold dessert bowls and place the remaining vanilla ice cream in balls on top.
Serve your apple cold dish with the ice cream wafers.
