Instructions:

Remove the skin from the apples, quarter, stone, cut into eighths, lightly steam with sugar, butter, vanilla sugar and the lemon skin. Whisk the whipping cream with the egg yolks. Whip the egg whites until stiff and fold in. Soak the onions in a little bit of the cream, then layer them with apples and cream in a greased gratin dish. The top layer must be cream and onions.
