Pour hot water over the peas and let them bubble gently in this water, cover the pot and cook quietly for an hour without stirring. Then pour off the cooking water and add as much fresh water to the peas so that they are just covered. Add onion, carrot, celery, bay leaf spice, bacon and bouillon cubes. Bring to a boil again. Do uncovered until peas are soft and falling apart. Do not burn, maybe add a tiny bit of water.
Remove vegetables, bacon and bay leaf. Mash peas and season with salt, pepper and a little nutmeg (freshly grated).
Cook, stirring throughout, to the consistency of mashed potatoes. Add butter and beat with a whisk. Serve together with bacon cut into pieces.
