For the honey plums with mascarpone cream, first slit the vanilla bean lengthwise. Boil together with honey and water.
Cut the plums in half and remove the seeds. Meanwhile, let them steep in the honey jus for ten minutes (do not boil). Remove the plums from the jus and let cool. Remove the vanilla pod.
Stir half of the honey jus well with the mascarpone. Season with nutmeg, cinnamon, ground cloves and a turn of pepper.
Spread the mascarpone cream evenly on plates. Arrange the plums on top.
Garnish the honey plums with mascarpone cream with mint leaves.
