For the Fennel Cream Soup with Shrimp, cook coarsely chopped fennel in water with bouillon cube until tender. Save fennel greens for garnish.
Finely puree cooked fennel with broth and 1/2 cup creme fraiche. Season to taste with salt and pepper.
