Peel the potatoes and cut into thin slices. In an iron frying pan strongly heat clarified butter. throw into the very hot fat a good handful of preferably fresh mustard seeds. Immediately put the lid on the frying pan (!!!), because the mustard seeds explode in the hot fat, releasing their aroma. After the “explosions” have subsided, add the raw potatoes to the frying pan and cook, stirring until tender. Do not let them become too soft. Season lightly with salt and bring to the table for the main course.

Tip: Instead of clarified butter, you can also use butter in most cases.
