Instructions:

Beat yolks and sugar until creamy. Whip the cream until stiff.

Peel 2/3 of the kiwis and cut into small cubes, place in a suitable bowl and pour boiling hot water over them (*). Immediately pour into a sieve and drain.

Mix the egg cream with the cream and stir in the kiwi cubes. Whip the egg whites with salt to stiff peaks, add the orange juice, then mix thoroughly into the cream.

Peel the remaining kiwis, cut into slices, blanch (scald) with boiling hot water, place in a strainer on the spot and drain. Line coupe glasses with the kiwi slices and pour in the mousse. Garnish with quark swabs.

(*) Preparations with dairy products can become a little bitter due to an enzyme contained in the kiwi fruit: this can be avoided by briefly overbrewing.
