For the honey ice cream, bring the cream, milk and honey to the boil, leave to infuse for 30 minutes, bring to the boil again.

Beat the yolks and eggs in a bowl. Put the mixer in the hot mass, turn it on and beat in the eggs. Blend for about 5 minutes.

Strain if necessary, allow to cool and freeze in the ice cream machine
