Season the pork chops with salt and pepper and sear them on both sides in a pan with olive oil. Deglaze with white wine, coarsely chop the tomatoes and add to the meat together with the basil. Braise for 20 min in the preheated oven at 165 °C. In the meantime, boil 1⁄2 l of water with aromatics, stir in the polenta. Mix in the Parmesan cheese and keep warm. Prepare the pepper sauce according to package directions. Serve the chops with the vegetables, sauce and polenta.
