Place the brined beef brisket in a large saucepan with cold water to cover. Do the meat for 15 minutes, repeatedly skimming off any foam that rises. Turn down the heat and gently simmer the brisket for about 2.5 hours with the lid closed.

Add cabbage, onions, Teltower turnips, carrots and rutabagas and simmer for another half hour. The beef should now be quite tender. Add the potatoes to the saucepan and cook until tender, about half an hour.

While the beef is on the stove, place the beets in an ovenproof dish and drizzle with oil. Cover with aluminum foil and cook in the stove heated to 190 degrees for about 1 hour until tender. Remove the beets from the heat, remove the skins, cut in half, season with salt and pepper and set aside until ready to serve.

Carve the brisket, arrange on a heated platter and surround with the vegetables and heated beets. Garnish with parsley and top with horseradish sauce, mustard and mustard greens.
