Rinse a gratin dish with cold water and place 2/3 of the rolled out puff pastry in the gratin dish, saving the remaining puff pastry as a lid.
Sauté the onions in the canola oil, add the minced meat and fry. Later add the carrots and the freshly sliced Jerusalem artichoke. Season to taste with the spices and sauté for about 5-10 minutes. Fold in the cheese and fill the whole thing on the puff pastry in the gratin dish.
Place the remaining rolled out puff pastry on top of the quantity and close the pastry case. Prick a few times with a fork. Mix the egg yolk with the milk and brush the puff pastry with it. Bake at 200 °C in a heated oven for about 60 minutes.
