A great cake recipe for any occasion:
For pregnant and breastfeeding women: Light fruit cake.
A light, high-fiber apple pie, of which it is okay to eat a piece more.
Sift flour, powdered sugar and salt into a suitable bowl. Press a bulge in the center, pour in the softened fat as well as the egg, knead into a crumbly dough. If necessary, carefully add a few drops of water to make the dough hold together. Form a ball and rest in the refrigerator, wrapped in plastic wrap, for about 1 1/2 hours.
Grease and dust pie tubs with flour. Roll out dough into a round on a well-floured surface. Dough diameter should be 3 to 4 inches larger than that of the pan. Place the dough in the mold and prick it several times with a fork. Preheat oven to 180 degrees (gas mark 2-3).
Remove skin from apples, cut into quarters, remove core. Cut quarters into 3 to 5 mm thick slices. Arrange slices overlapping in a spiral on the dough. Sprinkle the surface of the cake with sugar and bake in a heated oven for about 35 minutes.
Spread the apricot jam through a sieve and warm it up. Spread it on the cake while it is still hot.
The recipe yields a pie dish of 28 cm ø.
